Pay no attention to what that guy in the film "Sideways" said: Merlot is counted among the Noble Grapes for a reason. Boasting low levels of smooth tannins, this thin-skinned varietal is a staple in the creation of Right-Bank Bordeaux blends. For fine examples of these world-class bottlings, look to the Chateaux of St. Emilion and Pomerol. The maritime climate of these locales brings out the more tertiary characteristics of the varietal, providing earthy undertones to counterbalance its jammy notes. In the New World, Merlot has become a signature varietal in the mountainsides of Chile, where, likewise, the cooler climate draws out Merlot's complexity.
