Côte Chalonnaise is situated South to the Côte de Beaune (after Santenay). There are five main appellations in this area : Aligoté de Bouzeron, Rully, Mercurey, Givry et Montagny. Givry was highly regarded by Henri IV. Givry vines are situated around the village of Givry, between Mercurey and Montagny, and around the three hamlets of Poncey, Cortiambles et Russilly. Its chalky brown soil, as a result of the weathering of Jurassic limestone, has given rise to a village appellation often compared to Volnay. Harvest is done by hand, grapes are put in small cases in order not to damage the berries. Grapes are then sorted out by hand and destemmed. Maceration in open wooden vats or in stanless steel vats lasts 3 to 4 weeks. During fermentation pigeage is done twice per day. The wine ages 18 months in oak barrels from our cooperage; 1/3 of the barrels are new.
